Specialized Design for Boning and Trimming: With a blade length of 17.5 cm / 7 inches, this knife is well-suited for boning and trimming tasks. While it can be used for filleting, it is important to note that it is not a flexible knife.
Outstanding Sharpness and Durability: Boasting a Rockwell hardness of 60±2 HRC, the blade arrives super sharp and maintains its edge longer than regular stainless steel knives, thanks to the "super steel" core.
Elegant and Comfortable Handle: The sturdy resin handle, 20mm thick and 25mm high, features a rounded rectangle shape with a comfortable bolster, facilitating a secure pinch grip. The dark blue resin color, almost black in certain lighting, adds a touch of sophistication.
