The Sea Creature Series 8"-20.6cm Damascus kiritsuke chef knife is a great allrounder for all of those slicing, chopping, cutting and dicing jobs in the kitchen and the knife you will reach for the most. With a profile on the blades belly that is the same as a chef knife this kiritsuke chef knife is a good starting point to your knife collection and this one is sure to impress.

Knife stats:


Blade:
  • Blade is VG-10 core 45 layer Damascus "super steel" and is clad on each side with 22 micro thin layers of stainless steel and a VG-10 core. Folded hammered and welded to create a unique Damascus pattern. 
  • Unique, no two knife blades or handles are exactly the same.
  • Blade from heel to tip is 206mm
  • Blade height at bolster is 2"-5.5cm
  • Rockwell (hardness of blade steel) 60±2 HRC
  • 2.1mm thick at bolster and 0.95mm thick at tip
  • Arrives super sharp and holds an edge longer than regular stainless steel knives due to the “super steel” core

 

Handle:
  • Constructed with 3 rivets, resin and a patterned inlay material
  • Handle 22.5mm thick and is a rounded rectangle shape with a very comfortable bolster which is great for a pinch grip
  • Resin is clear to show off the colourful inlay material
  • Full tang design (blade is connected to the shaft that runs through the handle to the end cap)
