Modern Damascus knives use a hard core steel (like AUS-10 or VG-10) surrounded by softer layered steel for strength, flexibility, and visual beauty.
Are Damascus knives worth it?
Yes, for most home cooks and professionals, Damascus knives are absolutely worth the investment. Compared to budget stainless steel knives, Damascus blades hold a sharper edge longer, require less frequent sharpening, and are far more resistant to corrosion. How do I care for a Damascus knife?
Damascus knife care comes down to four things. First, always hand-wash, never put it in the dishwasher as the heat and detergent will damage both the blade and the handle. Second, dry it immediately after washing to prevent moisture sitting on the steel. Third, hone the blade regularly with a honing rod to keep the edge aligned between sharpenings. Fourth, store it on a magnetic knife block or in its leather sheath, never loose in a drawer where the edge can nick against other utensils.
What's the difference between VG-10 and AUS-10 Damascus?
Both are high-quality Japanese stainless steels used as the core in Damascus blades. AUS-10 (used in our 45-layer blades) has a Rockwell hardness of around 60 HRC, making it sharp, durable, and easy to maintain. VG-10 (used in our 67-layer blades) is harder at around 62 HRC, which allows for a finer, longer-lasting edge but requires a little more care when sharpening. For most home cooks, AUS-10 is the ideal balance of performance and practicality.
