Pick Your Blade Length

Most home cooks are well-served by a 20–21 cm (8") blade, versatile enough for large cuts, easy to control on smaller tasks. If you cook in volume or handle large proteins regularly, go up to 25 cm. If your chopping board is small, a 20 cm blade keeps things manageable.

Chef Knife vs. Kiritsuke

A standard chef knife has a rounded belly, ideal for rocking cuts. A kiritsuke has a flatter edge and pointed tip, better for push-cutting and Japanese-style prep. Both handle general kitchen tasks well. If you're newer to Japanese-style knives, the kiritsuke rewards a slightly more deliberate cutting motion.

What is a chef knife used for?
A chef knife is the most versatile kitchen knife you can own. It's designed to handle the majority of kitchen prep tasks, chopping vegetables, slicing meat, dicing onions, mincing garlic, breaking down herbs, and more. What makes Damascus steel better than regular stainless steel?
Damascus steel is made by forge-welding multiple layers of steel together, then folding and hammering them to create the distinctive wave pattern. This produces a blade that is harder, holds its edge longer, and is more resistant to corrosion than most standard stainless steel knives. Our Damascus blades use either AUS-10 or VG-10 as the core steel, both significantly higher in carbon and chromium than budget stainless options. Are your chef knives suitable for beginners?

A sharp knife is actually safer for beginners because it requires less force and cuts more predictably. We'd suggest pairing a chef knife with a honing rod to keep the edge aligned between sharpening sessions, and a quality chopping board to protect the blade.
How do I keep my chef knife sharp?
The two most important habits: hone regularly and hand-wash only. Use a honing rod before or after each use to realign the blade edge, this alone will dramatically extend the time between sharpenings. When the knife stops responding to honing, sharpen it with a whetstone or take it to a professional. Never put your Damascus knife in a dishwasher, the heat and detergent will dull the blade and damage the handle. Store it on a magnetic knife block or in its leather sheath to protect the edge.
Do your chef knives come with a warranty?
